1 x 340g can of SPAM® Chopped Pork and Ham - cut into cubes 1/2” cubes
8 tbsp of Henderson’s Relish
200g plain flour
¼ tsp salt
350ml milk
2 large eggs
Pinch of salt and pepper to season
4 tbsp vegetable oil
Directions
Pre heat the oven to 220C/180C Fan.
Put the flour, salt and pepper into a large bowl.
Beat the eggs and milk together and gradually add to the seasoned flour until you have a smooth batter. Leave to stand at room temperature for 30 minutes.
Spread ¼ of the SPAM® Chopped Pork and Ham on a baking sheet and bake in the oven for 15/20 minutes until golden brown. Leave to one side and keep warm.
Pour the oil into 8 holes of a deep 12 hole pudding tin, then heat the tin in the oven for 5 minutes.
Carefully ladle the batter into the tin and top each pudding the remaining cubed SPAM® Chopped Pork and Ham.
Bake the puddings in the oven for 30 minutes until well risen and the cubes of SPAM® Chopped Pork and Ham are golden brown.
Remove from the oven and top each pudding with the extra cooked cubes of SPAM® Chopped Pork and Ham.
Drizzle each pudding with a tablespoon of Henderson’s Relish, serve hot and enjoy!
