1 x 200g tub or can SPAM® Chopped Pork and Ham - cubed
1 cup of long grain white rice
100ml tin of coconut milk - made up to two cups with water
1 clove garlic - sliced
½ red pepper - diced
140g tin of sweet corn
2 tbsp of vegetable oil
Salad leaves for garnish
Directions
Pour the oil into a large saucepan and when warm add the rice and garlic, stir until all the grains are coated.
Add the two cups of coconut milk/water mixture and bring to the boil. Immediately turn down the heat to its lowest setting. Then put a sheet of greaseproof paper on top of the pan and press down with the pan lid to completely seal. Cook approximately 10-12 minutes or to the manufacturer’s instructions until cooked.
Take off the lid and remove the greaseproof paper and fluff the rice up with a fork. Allow the rice to cool down. Keep in the fridge once cold until needed.
Meanwhile add the remaining oil to a frying pan and fry the SPAM® Chopped Pork and Ham cubes until golden brown. Once cooked allow to get cold.
In a large mixing bowl add all the ingredients and mix well. Lay the salad leaves on a serving dish/platter and pile the Party Rice on top.
