This SPAM®LT is one of the winning dishes from season 4 of Food Network's The Great Food Truck Race. It's a fresh spin on a classic sandwich by using Volcanic Mayo, a warm sweet roll and SPAM® Classic.
Ingredients
1 (340g) can SPAM® Classic cut into 9 slices
Hawaiian sweet rolls*, split and lightly toasted
1 medium yellow onion, thinly sliced and caramelized
2 Roma tomatoes, cut into 12 thin slices
72g finely shredded lettuce
71g thinly sliced snow peas or watercress
1/2 tbsp Volcanic Aioli (see below)
* Brioche buns make an excellent substitute if you can't get hold of the Hawaiian sweet rolls
Directions
For Volcanic Aioli:
In bowl, combine 1/2 cup of mayonnaise, 11/2 tablespoons of Sriracha hot chili sauce, 1/4 teaspoon garlic chili paste and 1/8 teaspoon sesame oil. Set aside.
For Sliders:
Cut each slice of SPAM® Classic in half. Cook SPAM® in skillet until browned on both sides.
Drizzle a little Volcanic Aioli on the bottom half of each roll and place a few caramelized onions over the sauce. Top each with 11/2 slices of SPAM®. Top each burger with a slice of tomato, lettuce and snow peas. Drizzle with more Volcanic Aioli. Cover with tops of rolls.
