SPAM^® Fusion Fajitas

Ingredients

• 1 x 340g can SPAM^® Classic, cut into 1/4-inch-thick strips
• 15g chopped fresh cilantro
• 1 (550g) can chopped pineapple in juice, drained
• 1 small (100g) can diced jalapeño peppers, drained
• 8 6-inch Fajita Tortilla flour tortillas, heated
• 1 large red bell pepper, cut into thin strips
• 1 medium yellow onion, sliced into thin wedges
• 2 tbsp olive oil
• 25g sliced green onions
• 60ml Korean Teriyaki Sauce

Directions

1. To make salsa, in medium bowl, combine pineapple, jalape ños, green onions, cilantro and teriyaki sauce; mix well.
2. In large skillet, heat oil over medium-high heat. Add onion wedges and bell pepper; sauté 5 to 8 minutes or until lightly browned and softened. Remove vegetables from skillet.
3. In same skillet, fry SPAM^® Classic 5 minutes or until lightly browned. Stir in sautéed vegetables. Spoon SPAM^® mixture into warm tortillas. Top with salsa.
