SPAM® Cantonese Sweet and Sour

Ingredients

  • 1 340g can SPAM® Classic cut into 1/2-inch cubes
  • 1 225g can drained bamboo shoots
  • 1 carrot, thinly sliced diagonally
  • 1 minced clove garlic
  • 1 tbsp cornstarch
  • 1 cucumber, cut into 1/2-inch chunks
  • 6 green onions sliced into 1/4-inch pieces
  • 1 tsp ground ginger
  • 3 tbsp ketchup
  • 1 tsp soy sauce
  • 3 tbsp sugar
  • 2 tbsp vegetable oil
  • 3 tbsp vinegar
  • 158ml water

Directions

  1. In wok or large skillet, heat oil over medium heat. Add carrot, onions and garlic; cook, stirring occasionally, 4 to 5 minutes or until crisply-tender.
  2. Add next 7 ingredients to skillet.
  3. Cook, stirring constantly, 5 to 6 minutes or until sauce is thickened. Add SPAM® Classic, bamboo shoots and cucumber. Cook until heated thoroughly.
  4. Serve over hot rice.
