Half a 340g tin of SPAM® Chopped Pork and Ham (or 1x200g tub), diced
1 large baking potato
Generous knob of butter
Salt and pepper
Fresh Parsley, finely chopped
Olive Oil (for brushing)
Serve with grated cheese and salad
Directions
Preheat oven to 220°c/200°C Fan/Gas Mark 7.
Make sure the skin of the potato is clean.
Rub with a little oil and salt and pepper and place on a baking tray in the middle of the oven until cooked and the skin is crisp and brown (approx. 1 hour depending on the size of the potato).
Meantime fry the diced SPAM® Chopped Pork and Ham in a dry frying pan (alternatively, place on a baking sheet in the oven, keep watching and turning). Remove when golden brown and keep warm
When cooked allow the potato to cool slightly. Cut a cross in the top and scoop out the flesh into a warm bowl, add the butter, season and mix well. Fold in half of the diced cooked SPAM® Chopped Pork and Ham and a little chopped parsley.
Pile into the potato shell and top with the remaining cooked SPAM® Chopped Pork and Ham.
Sprinkle with more chopped parsley and grated cheese.
Serve with extra grated cheese, salad and mayonnaise on the side.
